Chicken fillets—most commonly referred to as boneless, skinless chicken breasts—are the leanest, most versatile, and most popular cut taken from the breast of the bird.
A full chicken breast yields two individual fillets, each consisting of the main pectoral muscle and the smaller, more tender muscle attached underneath, known as the chicken tenderloin.
