Shin of Beef
Shin of beef (also known as beef shank) is a budget-friendly cut taken from the lower leg of the cow. Because it comes from a highly exercised, hard-working muscle that continuously supports the animal's weight, it is naturally fibrous, lean, and packed with an exceptional amount of connective tissue and collagen.
While it is virtually inedible if flash-fried, beef shin is the undisputed champion of low-and-slow cooking, transforming into an incredibly unctuous, sticky, and meltingly soft masterpiece.
