Beef fillet tails are the tapered, narrow ends of a whole beef tenderloin (the finest and most expensive muscle on the cow). Because this section is too thin to be cleanly cut into uniform, thick fillet steaks, it is separated by the butcher and sold as a highly versatile, affordable luxury.

It delivers the exact same buttery, melt-in-the-mouth tenderness and lean texture as a premium center-cut fillet steak, but at a fraction of the price.
