Brisket
Beef brisket is a large, boneless cut of beef taken from the breast or lower chest of the cow, just below the chuck. Because cows do not have collarbones, these muscles support about 60% of the animal's standing weight, making brisket an exceptionally tough, dense cut packed with hard-working muscle fibers and heavy connective tissue.
