Oxtail
Oxtail is the culinary term for the tail of cattle (historically from oxen, but today sourced from beef cattle), consisting of bony vertebrae surrounded by a rich layer of flavorful meat, heavy connective tissue, and a high concentration of bone marrow and collagen.
