Fillet steak
Fillet steak (also known as filet mignon) is widely considered the most premium and tender cut of beef available. Cut from the tenderloin—a lazy muscle running along the inside of the animal's rib cage—it does very little work, giving the meat an exceptionally fine-grained, melt-in-your-mouth texture. Because it is naturally lean with very little intramuscular fat, it has a delicate, subtle flavour and is best cooked quickly to prevent drying out
