Rolled Sirloin
Rolled sirloin is a premium, classic British roasting joint created by boning a whole beef sirloin, trimming the excess fat, and tightly rolling it into a neat, uniform cylinder secured with butcher's twine. Cut from the upper middle back of the cow (just behind the ribs), it is highly favored for Sunday roasts because it offers the rich flavor of a prime steak in a format that is incredibly easy to carve.
