Lamb Koftas
Lamb koftas are a sensational, flavor-packed staple of Middle Eastern and South Asian grilling. Unlike a shish kebab which uses solid cubes of meat, a kofta is made from finely minced (ground) lamb mixed directly with fresh herbs, grated onions, and warm, aromatic spices. The mixture is molded by hand onto flat skewers into a distinct oblong shape, then grilled over high heat until beautifully charred on the outside and juicy on the inside.
